Mmm... beef rendang. It’s fragrant with the smell of toasted coconut and spices. Its sauce is deliciously thick instead of runny, with shreds of desiccated coconut and beef that get between your teeth in a good way.

Nations fight over the origins of beef rendang, chefs lose face when they mess it up, and fashionistas choose waistbands over buttons when they know beef rendang is on the menu. 

We don’t know about you but we get frustrated whenever we bite into a spoonful of rendang and chew on tough beef. Some meat just feels so dry and doesn’t jive with the rich rendang sauce. Or our teeth rejoice at the ultra-tender meat but our tongue rages at the sauce that got burnt in the process of achieving that effect. Ugh.

Super Simple Wagyu Beef Rendang Recipe

So, we talked to the best cooks — Grandma, Mum and other sages — to get a rendang recipe that would go well with Wagyu beef and doesn’t take culinary talent (of which we possess little) to prepare.

Here is the easiest beef rendang recipe we tested without adult supervision.

While some cooks throw in cinnamon sticks, star anise, cumin and cardamom seeds, we went with less ingredients to draw out more Wagyu beefy flavors.

Some master home-chefs pan-fry fresh desiccated coconut then pound them into a paste as well as make coconut milk from scratch. We went with a just-tear-here-to-open packet of kerisik and carton of santan.     

For the beef, we used A5 Iga Beef, the highest grade of Wagyu beef from Japan. Unlike other Wagyu beef, Iga Beef has a less greasy taste — perfect for a super-rich dish like rendang. Cooking Iga Beef to tender perfection takes less than 2 hours, or 30-40% of the time it takes for regular beef (which still won’t achieve the same effect).

While this is premium Wagyu beef, you may be delighted to know fresh Iga Beef is actually quite affordable when used in rendang. Pick the Neck and Shin cuts for affordability. If you have a higher budget and want the best rendang beef cut, go with Top Round.

Wagyu Beef Rendang with Iga Beef

Cooking Instructions 

Step 1

Slice open the chilis and discard the seeds. Soak the chilis in a bowl water.

Step 2

Wash, peel and chop up the shallots, garlic, ginger, galangal, turmeric and chili. Blend them in a food processor with some water.


Step 3

Slice the turmeric leaves. Trim off the top half of the lemongrass and bruise the bottom half with the back of your knife. 

Wagyu Beef Rendang Fry

Step 4

Heat a little oil to your wok. Pour in the blended ingredients, then add the turmeric leaves, lemongrass stalks and lime leaves, and fry them together until they become fragrant.


Step 5

Add the Wagyu beef and some water. Simmer the Wagyu beef with all the ingredients over low heat for about 1½ hours. Add some salt and sugar according to your taste. Stir every 10 minutes or so to avoid letting the ingredients stick to the bottom. Add more water if the sauce is becoming too dry.


Step 6

When the Wagyu beef feels like it can come apart with a spoon, add the coconut milk and toasted coconut paste. Stir more often until the sauce is thick enough to your liking, which might take 10 minutes or longer.


Done!

Serve with white rice, lemang or roti jala.
