Cantonese-Style Braised Wagyu Beef

Here is a hearty beef stew with chunky yet tender meat — Wagyu beef feels as soft as the daikon (radish) in this dish. Brisket is the best cut for its perfect balance between juicy fat and meat, while daikon complements the beefiness with hints of bitter and pepper. This flavourful dish also contains star anise, garlic and ginger, and rich sauces (oyster, chu hou, hoisin and soy sauce).

Wagyu Stir-Fry

Stir-fry is a favourite cooking method for Chinese dishes, especially when you don’t have to worry about rubbery beef. The intense marbling in Wagyu beef results in superior tenderness without the need for tenderizers. All you have to do is cut your meat into bite-size pieces and pair them with your stir-fry’s ingredients.

The classic Black Pepper Beef Stir-Fry has julienned onions with red, green and/or yellow bell peppers. A simpler version uses only garlic, onions and scallions. Other veggies that work well for stir-fry are broccoli and celery.

The beef and ingredients are stir-fried in aromatic sesame oil. For the sauce, combine oyster sauce, light soy sauce, dark soy sauce and white pepper.

If you have leftover rice in the fridge, we can’t think of a better use for it than cooking fried rice. Spring onions, eggs and splashes of soy sauce are other ingredients you’ll need and probably have lying around. Add onions and vegetables like carrots and long beans if you like.

Silky smooth Wagyu beef elevates this dish. You can use any leftover Wagyu beef, except we doubt there’ll be any.
