Beef Up Your New Year

Wagyu beef for CNY

The New Year has kicked off with a roaring start — malls and halls are decked with boughs of peony to make 1st February even grander than 1st January 2022.

With booster shots and careful planning, there’s no reason we can’t have proper family reunions this Chinese New Year.

If you are planning to spread out your gatherings to stay safe, you might want to serve different menus for variety. Here are some Wagyu beef ideas for your reunion dinner and gatherings to make them spectacular. Wagyu beef is also a great halal alternative.

New Year Wagyu Beef Dishes

Wagyu beef is often a special treat, like the scallops, prawns and abalones that are popular features of Chinese New Year dishes. It's also a contender for the most expensive item on the menu. Be a tiger in the kitchen cooking something new, or use Wagyu beef in your family beef recipe to serve the best version of it. Its unrivalled tenderness and quality means you don’t have to waste time on tenderizers and prep work.

Wagyu in Steamboat

A symbol of family reunion, we look forward to enjoying this communal hot pot with our loved ones as we swap life stories. Enhance the flavour of your broth by adding succulent slices of Wagyu beef. The meat cooks fast while offering different flavours if you serve a variety of cuts. Cuts like brisket offers a juicy bite with its rich fat, while leaner cuts like the top round offers a leaner bite.

Recommended Cuts: Shabu-Shabu Slices, Chuck Roll, Knuckle, Shoulder Clod or Top Round

Cantonese-Style Braised Wagyu Beef

Here is a hearty beef stew with chunky yet tender meat — Wagyu beef feels as soft as the daikon (radish) in this dish. Brisket is the best cut for its perfect balance between juicy fat and meat, while daikon complements the beefiness with hints of bitter and pepper. This flavourful dish also contains star anise, garlic and ginger, and rich sauces (oyster, chu hou, hoisin and soy sauce).

Recommended Cuts: Brisket

Wagyu Stir-Fry

Stir-fry is a favourite cooking method for Chinese dishes, especially when you don’t have to worry about rubbery beef. The intense marbling in Wagyu beef results in superior tenderness without the need for tenderizers. All you have to do is cut your meat into bite-size pieces and pair them with your stir-fry’s ingredients.

The classic Black Pepper Beef Stir-Fry has julienned onions with red, green and/or yellow bell peppers. A simpler version uses only garlic, onions and scallions. Other veggies that work well for stir-fry are broccoli and celery.

The beef and ingredients are stir-fried in aromatic sesame oil. For the sauce, combine oyster sauce, light soy sauce, dark soy sauce and white pepper.

Recommended Cuts: Bolar Blade, Chuck Eye, Oyster Blade, Inside Skirt, Tenderloin, All Rear/Round Cuts

Wagyu Beef Fried Rice

With all the abundant feasting, you’re bound to have a surplus of blessings … and leftover food.

If you have leftover rice in the fridge, we can’t think of a better use for it than cooking fried rice. Spring onions, eggs and splashes of soy sauce are other ingredients you’ll need and probably have lying around. Add onions and vegetables like carrots and long beans if you like.

Silky smooth Wagyu beef elevates this dish. You can use any leftover Wagyu beef, except we doubt there’ll be any.

Recommended Cuts: Leftovers, Striploin

Wagyu, the Big Meat

At our reunion dinners, the highlight of the table is the Big Meat dish. This centrepiece is no daily bread; it’s special and huge and impressive to show how much we’ve been lavishly blessed. A whole fish is commonly presented here, but we have a modern twist. If the tomahawk isn’t a sign of abundance, we don’t know what is.

Recommended Cut: Tomahawk
